The limestone imparts a wonderful minerality while the clay adds depth to the finished wine. It’s produced using the saignée method whereby the skins ‘bleed’ a little colour into the wine over a period of around 12 hours. Fermentation temperatures are kept low to protect the delicate aromas, and it's bottled in the spring to capture its vibrancy.
