The Beauroy site, designated as a Premier Cru ‘climat,’ features limestone-rich soils that produce fresh, clean, and mineral-rich wines. Sylvain Mosnier's traditional approach avoids new oak, resulting in wines that are delightful when young but also have the potential to age and develop beautifully in the bottle.

Taste
With its hallmark green-white-gold colour and citrus and green apple-soaked mineral bouquet, this is a classic Premier Cru Chablis. The palate offers an intriguing blend of freshness and depth, with grapes, green apples and lemons overlying saline-tinted minerals before a touch of warming honey comes through.
About the Producer
Sylvain Mosnier is a highly respected, family-owned producer in Chablis. Since 1893 they have crafted a range of exceptional wines that are true to their region’s traditions and their vineyards' character. They own 15 hectares of vines in several well-placed sites, including the Premier Cru Beauroy. Their vines are old by Chablis’ standards being on average over 65 years old and give classic, steely wines of great precision.

Sine 2004, the estate has taken the direction of preserving its terroir while respecting nature and biodiversity, and all these actions are implemented on a daily basis.

Bourgogne Aligoté an can be produced throughout Burgundy. Domaine Albert Bichot prefer to use fruit that’s gives its wines the freshness and minerality that makes Bourgogne Aligote such an interesting wine. Their wines are produced from selected vineyards in Auxere, the Côte Chalonnaise and the Hautes Côtes de Beaune and Nuits and the grapes are hand picked. The wines is made in temperature-controlled stainless-steel tanks to preserve it freshness and bite, and are given 8 months ageing on their lees – fine deposits left over after fermentation – which softens it and adds a creamy tint.
Taste
Ghostly pale, with a greenish, Chablis-like tint, the bouquet blooms out of the glass, offering white flowers, green pears and yellow grapefruit. On the palate, it's fresh, zesty and clean. Mouth-watering citrus is subtly offset by savoury minerals, green herbs, and yeast.
About the Producer
Maison Albert Bichot is one of the great names of Burgundy. This family-owned domain was founded in 1831 and now has estates stretching from Chablis in the north to Beaujolais’s Moulin-a-Vent in the south. All their estates and the growers who support them, practice sustainable viticulture. Much of the work is done by horse and hand and all fertilisers are organic. Like many of the top Burgundy domaines, intervention in the winery is kept to an absolute minimum to allow the wines to offer a taste of place.

The pandemic and dwindling demand from wineries compelled it to shift its focus from cultivation to crafting its own wine. Already receiving multiple awards for its wines, Malvid's Verdejo exhibits great intensity on the nose, with aromas of tropical fruits and citrus notes perfectly combined with herbal undertones. It is structured and balanced on the palate, offering a fresh and long fruity finish. This outstanding example of Verdejo was recently awarded a hugely impressive 90 Points by James Suckling.

This diversity of terroirs allows Xavier to match each grape variety with its perfect growing conditions to produce wines of complexity, and a real expression of the land that they are from. Sourced from the lieux-dits of Les Pentes and Les Hauts Noyers this Touraine Sauvignon Blanc has the balance and minerality of many Sancerre's but for a fraction of the price.
